            Ribs would have been nice, but I had the day job. Charlotte tells me it's rewarmed lobster bisque from last night, some oysters she wants baked, something bready and crispy, and Malbec. I guess we'll be mellow enough as we yell at the TV! ;-)

          Nah, this is'nt a national thing, even though we have Q'ers all over the world. Think more of this site as a village. Oh darn, now l had to just go & say that did'nt l? Oh well, goodnight Suzie Creamcheese, where ever you are.

          Actually, l think ribs are In-dee-pen critters, just a squeelin until WE get a hold of them.

              I need some help. This weekend I have been asked to run the smoker on the new trailer I built for an event here in Buenos Aires with 70,000 people attending.
              I have been told they want to cook 700 servings (3 ribs each) so figure about 175 racks over 3 days.

              I need to buy the ingredients for the rub tomorrow, so the question is: How much spice and sugar do I need to buy?

              My version of Memphis dust varies slightly as I use only 1/2 cups of sugar instead of 3/4 cups and I also add a tablespoon of ground cloves to the mix.
