    Yeild for Onion powder

    I grew a lot of Texas sweet onions this year. Well I grow a lot of them every year . I usually grow about 300. I still have a bunch in the house storing but have been looking at ways to use them up before they are bad. Last month I sliced 2 onions on a mandolin really thin and put them in the dehydrator for almost 30 hrs.

    Then I put them on a screen rack and put them in the garage for the last three weeks. I just ran them through the Bullet blender and it made an awesome powder. With the 2 onions I ended up filling a 4oz jar ( it was 8 tablespoons of powder) to the top. I am going to cut some more onions today and and start drying so I can make some more onion powder. I will vacuum seal when done and freeze till needed.

    Living in Phoenix is nice as I can have a garden year round. I love to grow all my own things so I know whats -not in it. I use all organic compost, a lot of which I make, and use just fish emulsions and seaweed extract as fertilizers. I put bone meal, blood meal, and alfalfa meal in the soil. Almost every thing used in the different rubs and sauces from this site can be grown here.

      Fried onions and onion soup are my favorite, though i'm not sure even I could go through 300 of them!!

        Do some caramelized onions and freeze em in portions. Use them on sammiches, burgers, patty melts, add to curries, run em through processor for french onion dips.

          _John_ I make a killer 3 onion, onion soup I have perfected through the years. I use turkey stock and white wine and a little beef stock. It's the wife's favorite thing I make. I use about 6-7 onions for about 3 quarts. Next time I make it I will write down the measurements if your interested.
