    Is the meat ruined?!!!

    Was smoking 2 pork butts last night and the breaker tripped that the smoker was plugged into. It had only smoked for 1 hour and then sat with no heat for 6 hours. The meat was at 81 degrees when I reset the breaker. It is now continuing but I'm worried about bacteria having formed. Any thoughts on whether it's ok to eat it?

    Ouch. I'd worry enough about that to probably chunk. Does it smell Rancid? It's likely that it stayed in the danger zone for a lot of bad stuff to grow on that.

      It’s very unlikely that your meat got to 140F in 4 hours. It is highly likely it sat inside the danger zone for too long, as Jerod says above. If it was me, I’d chuck it.
