My niece and nephew both calf rope and are always on the lookout to raise money to be able to make as many rodeos as possible every year. They approached me and asked if I would help them make some bacon as a fundraiser to help with their entry fees. They did an awesome job! They made and sold 72 pounds of salty goodness!!
They started out using my dry cure, giving the bellies a nice thick coating, and then into the refrigerator for about a week.
One week later and it's time for a nice coating of coarse black pepper, a 200 degree smoke bath for a few hours, then back into the fridge to get nice and chilly (overnight) before slicing the next afternoon. They did an outstanding job!
