    First effort for St. Louis Ribs.

    It's been over a over a year when I posted about smoking a pork butt. Well today was St. Louis ribs for the first time. I must have read posts here about 10 times as well as other tips before I finally made the attempt. I think they turned out pretty good. They are juicy and tender and I'm very happy. I monitored the temperature every 30 minutes and adjusted as needed. I was able to keep it between 220 & 245 for the most part. Took 5 hours. I used Meathead's rub - love it.

    Look great. Short cook, mine take 7 hours give it take at 225°

      Thanks. I was expecting them to take longer, but when I broke down and cut them in half at 5 hours, they looked great - and they do taste great!

    I would happily eat those ribs! Nice job! I lived in Colorado Springs for 30 years. Nice to "talk" to someone from there.
