That looks delicious, love black beans and yams, great combo that I'm sure is only better with smoked pork.

No criticism here (other than a couple sideways pics but it happens). That looks amazing! Never thought of that chutney with pork but it makes sense.

Pork butt on sweet potatoes
Cooked a pork butt yesterday. Was trying to think of something new to do with it and this is what I came up with. It took a bit of time, but turned out to be worth it.
Charcoal prep... which I learned here (thanks guys):
Then pork prep. I dry-brined per Dr. Blonder's and Meatheads recommended 1/2 tsp per lb. I only had 16hrs to brine, but it still helped quite a bit. Then coated with thin coat of olive oil, and my own dry rub (can't forget lubrication solution for the cook). I also used a water pan to keep the humidity high in the UDS.:
While the butt was smoking at 250 (I usually do 225, but was short on time), I mixed up a Carolina Red style sauce:
Caramelized some onions:
Roasted some thick sweet potato slabs with fresh rosemary:
Made a mango chutney:
and sliced up some red cabbage:
Here's the shredded pork (can't believe I forgot to take a picture of the butt before shredding... dummy):
And the final plate with a side of black beans. just put a couple of sweet potato slabs down, top with pork and sauce. some caramelized onions, red cabbage (a little more sauce) and a dollop of chutney. This was my wife's plate and she has a sweet tooth, so she goes heavy on the chutney. I think that overpowers the meat flavor, but everyone has their own tastes:
