    To brine or not to brine...

    That is the question...

    So I’m planning on smoking a couple pork butts tomorrow...but the only butts available up by my parents are bagged/wrapped.
    On the label they state that they contain "up to 12% added solution of water, potassium lactate, sodium phosphates, salt, sodium diacetate."
    O_o

    So, do I dry brine those anyway?

      I would not, since it sounds like it has salt and evil evil chemicals as well.

        Yes, plenty of evil chemicals it seems. And for no extra charge. LOL

      I'd sprinkle a little salt at cooking before applying the rub.

        I thought about that as well...seeing as I don’t actually know how much salt is that "up to 12%" nonsense. Rather than a brine, just rinse & give it a quick dash of salt.

      Salt that sucker. A little for good measure won’t hurt. Or do like he said 👆

        Before you brine, look at the sodium content on the nutrition label. Brining could over salt it.

          That was/is my fear.
          Just not sure how accurate that label might be given the "up to 12%" nonsense.

          The evil chemicals are what make it taste extra good!

          I agree with basing your dry brine decision on the sodium content in the nutrition facts.

            I'd probably skip the brining. But I hate over-salting more than I hate under-salting.

            Update since I forgot to do so...
            I skipped the brine and went straight to the rub. Didn’t miss it, so I’m glad I skipped it.
            They both turned out excellent and everyone was VERY pleased.

            Didn't get any pics this time because by the time I opened the cooker, it was getting late and the natives were getting restless.
