    Ribs won't fit

    I have a relatively small smoker. The racks of St. Louis ribs I have don't fit on the racks. Is there any harm in cutting them in half? The alternative is to just cut off the 1-2 ribs on the end that make the rack too long.

    No harm at all. You just can't do the "bend test" with half racks.

      Either way you choose I think will get you better results than this, which I have seen several times online lately.

        I cut mine in half all the time when using the PBC.

              It is tough getting ribs in Australia at all, so I often have this problem, in that local butchers that will do ribs for me at all tend to leave hunks of meat on the ends. I find it much better to just trim to fit cooking space, then put all of the extra 2 or 3 rib pieces on a less heated rack. That way i can still do the bend test, and the bits work out really good but don't always make it for the guests...Oh well!

                I prefer the toothpick test so cutting in half is never an issue.

                  I like the bend test on a full rack, toothpick when they get shorter.
