    Refrigerating a Wet Cured Ham

    1st time poster, longtime reader. I am just about to take my newly cured raw ham out of the wet cure (using the site's method, of course) but, our plans have changed and we now have company coming Saturday and I'd like to cook this for them. Is it good in the refrigerator outside the cure for the next couple days? My curing time was 12.3 days, and I'm about 2 hours from Day 13 starting in the cure.

    It should be fine. The cure will really help to preserve it.

        Take it out of the cure at the proper time and just refrigerate it and cook it. Should be a fine piece of eating. You do not want to over cure as it will become over salted. When curing the meat will maintain its equality once you remove it from the cure.
