    Keeping chops from drying out?

    Have some lean, not to thick, butterfly pork chops. Any advice / ideas for keeping them moist on the grill?

    Seriously, brine either dry or wet. They're butterflied, so a stuffing with some fat & moisture. Front sear and watch your temp like a hawk. Pull a couple of degrees before your desired temp, but make sure any stuffing is safely cooked. Maybe a glaze or board sauce, depending.

      To add to the above.... If they’re thin, cook hot/fast. If they’re a bit thicker cook as described above. Brining will definitely help.

        Yes brine in a salt water solution. In the future buy thicker chops, and still brine.
