That is impressive....Let us know how it comes. I am wrestling with my own brisket issues as we speak. Sometimes I think it is just as important to see how folks save disasters, than it is to follow a perfect cook. You got this!!
It turned out great but I had to pull seven butts out and put in the oven at 325 to get them done by noon.. then my smoker could get up to temp to finish the other ones for 3:00 delivery..
