    Pork roast technique question

    Trying a nice pork roast from a new store up the street. My normal store uses only a few wraps of a string to keep it together. This is pretty good, because I am able to cover a lot more surface with rub during the prep.
    This new one has a net that, of course, keeps it together, but prevents me from getting any rub down in the cracks and crevices.
    Should I remove the net? Or just rub down what I got?

    BTW - I did search for an answer before I created a new topic.

    I would remove the net, apply the rub and then tie it back together using kitchen twine.

      I agree. You can space the bands apart about 2 fingers. This will definitely help the roast keep shape and allow for a more even cook.

        Thanks. That's kind of what I did.
        Cut the net and left a few bands to help keep the shape.
