I think you are good unless your butts are too good! I hit the mark one time and a guest went back four times to fill his plate. I didn’t mean to raise your anxiety. We didn’t run out of meat that day. I have cooked 40#s for 60 and we had leftovers, so I think you are good.

I calculate 1/2 pound of raw meat for each quarter pound serving, so 1 lb gives ya two 1/4 lb sandwiches.

I am curious how the quantity turned out Hulagn1971? Did you have much left over?

Yesterday I smoked a 10 lb prime brisket for a small party of 11 older adults. I trimmed about 1 1/2 pounds of fat off the brisket before cooking it. There was about a 3-4 lb piece of leftover. That is about 1/2 lb cooked brisket per person. It gave a nice hunk of leftover for the host. We aren’t the big eaters we once were. The party was only about 5 hours. I served the brisket. Everyone wanted the BBBR recipe so it seemed like everyone liked it. It was the first time I really tried to calculate with accuracy how much to cook. I think if I was cooking for a more diverse group I would figure 3/4 -1 pound of raw meat knowing you could give out leftovers. If I was on a tight budget the 1/2 lb per person would feed everyone.

jecucolo the three 10lb butts worked out perfect. Ended up feeding about 30 people, maybe 35 and I was able to give each person a large portion. There was maybe enough left for 2 sandwiches after people had seconds. It was a great success!

Leftovers are always good. Err on the side of caution.

I have taken to using slider buns or at least having half sliders and half regular sized buns. You can stuff a lot of meat in a slider bun and give hungry people several. Tends to be less waste
