This afternoon was spent messing with an experimental smoking gizmo that necessitated some stick burning fire management skills of which I have none.
I did a run yesterday and after the first test I fathomed a few new ideas that I actioned today.
I prefer being productive when I know I am not going to get instant results so I Smoked a Spatchcock chicken on the gizmo and got another kettle fired up to grill some pork rashers and rib chops and a piece of †boereworsâ€.
Used my coal grill from big kettle (sorry not so clean)

Chicken at first peek with lemon and rosemary seasoning.
I still have more schemes to effect tomorrow and while I’m busy with that I have a 30 pound bone in brisket that has been dry brining in the fridge since Wednesday passed.
I will be cooking the brisket on a "spit braai".
Will be an early start.
