    Cooking while Experimenting.

    This afternoon was spent messing with an experimental smoking gizmo that necessitated some stick burning fire management skills of which I have none.
    I did a run yesterday and after the first test I fathomed a few new ideas that I actioned today.
    I prefer being productive when I know I am not going to get instant results so I Smoked a Spatchcock chicken on the gizmo and got another kettle fired up to grill some pork rashers and rib chops and a piece of ” boerewors”.

    I still have more schemes to effect tomorrow and while I’m busy with that I have a 30 pound bone in brisket that has been dry brining in the fridge since Wednesday passed.
    I will be cooking the brisket on a "spit braai".

    Neat, except for the rosemary. That and ginger trips out my taste buds.

      holehogg Do you have some inside pics of that braai? or are the other pics from the inside? When you say "spit braai" do you mean something that rotates like a rotisserie?
