    Today's cook - Boudin stuffed, bacon wrapped pork tenderloin

    Sorry I didn't get many photos. This is my boudin stuffed pork tenderloin wrapped in a bacon weave. The boudin came from Don's Specialty Meats in Scott, LA. I added some bell pepper but nothing else. Click image for larger version

    Love this recipe, I actually do one similar. Instead of bacon wrap I do Serrano ham inside the roll up. Yours came out really nice, great job !!!!

      I do a version as well. Bacon wrap, roll fillet pork rubbed with Cajun seasoning, then stuffed with Bogdan, red jalapenos, crawfish tails, and Jack cheese. That cut is just some versatile. About 3 other ways I stuff it too. This one looks fantastic.

      treesmacker Just down the road from where I grew up. FYI- running back for Clemson that ran for three touchdowns in the championship game is from Jennings, LA.

        I actually stopped there one time cruising through LA on I-10. Buddy of mine told me about it. That is some serious boudain, and I love boudain !!!

        You had to go and bring that Clemson stuff up didn't you!!. About killed me to see him leave the state but I'm glad is has done well.

                        It is eaten in many places around the world. You will never see it sold like that in Louisiana. To dang fancy and the food inspectors would be all over you.
