    Chops!

    Did a quick cook tonight and laid a layer of smoke on some 12 ounce pork chops and then a quick sear to top them off. Amazing! What is your favorite 'fast smoke' cook?

      Deer wrapped in bacon has always been hot and fast. Next cook I want to cook the bacon some first. Talk about great balls of fire with bacon over direct heat.

        I always love a good pork chop. But I would have to say the Spinalis steak is my favorite. Sooo much flavor.

            That sounds so good. Weather starting to change there in Rochester? September and October were my favorite months there.
