    My hybrid recipe St Louis Ribs

    Meat Mitch pork rub right before going on. Pellet smoked x 3.5 hours @225 then agave syrup + light brown sugar on both sides and wrapped. Back on smoker for 1.5 hours and then to faux cambrio for 1 hours. Delicious. Click image for larger version

      Nice. I got a rack in the fridge. Gonna try running hot (300+) to see if I get better darkness in the pellee.

        I actually did that a week ago with some Smithfields. They were real thin cut (not quite shiners but thin) and I almost burnt them to a crisp. I'm going back to low and slow, but YMMV.

        Troutman. I sometimes cook super thin baby backs at 300-325f . About an hour is all it takes. Not enough meat on em to low n slow. It is almost like grilling them in a smoker.

            I love the color and the finish. I don't like fall of the bone and yours look perfectly cooked to me !!
