This is my best butt yet.
My niece requested pulled pork pizza this weekend when she comes over. So, naturally, I had to smoke some shoulder. I got a nice looking butt, about 6lbs.
I let it brine in apple juice and rub spices for 48hrs. (I used a store bought rub... Didn't have time to make any). Rubbed it down heavily before it hit the smoker. Used applewood, as usual. Smoked it for 12hrs until it hit 203F internal... No wrapping.
The results were incredible!
The bone pulled out perfectly clean and the meat fell apart in my hands. It had the beautful jiggle you expect from a well cooked hunk of meat.
