Percent bone in bone-in pork chops?

    Percent bone in bone-in pork chops?

    Can anyone tell me what percent of a rib or center cut pork chop is bone? I'm trying to solve an argument without cutting up some chops and weighing the meat vs the bone.

    I bet it depends on how the butcher cut it and how thick it is. Since bone & meat weight differently, if the chop is thicker or thinner this would affect the ratios. I'd say cut one up and weight them to solve the argument. (And post your findings!)

      As stated, weights won't really help solve your debate. However a displacement test might. Fill a small pot that will fit the bone with water, then place the bone in, remove it, then measure the water. Repeat with the meat. It still won't be fully scientific since you probably won't be able to fully remove the meat from the bone and the bone might float depending on it's density. It's still gonna vary each butcher though.
