I have a picnic nearing the end of the calculated curing period but the weather will delay my chance to smoke it. How long can I hold the cured but raw ham before I smoke it?
A long time! Once cured, it is cured. If there is a desalination step in whatever recipe you are using, you may want to extend that a bit but otherwise an extra few days (or even weeks) shouldn't be a big problem. Enjoy!
