    I never wrap but that's because I like 'em how I like 'em, we should all make them how we like them!

        Cook 3 hours then wrap for two then uncover and cook till done

          Is there a stigma around wrapping? I wrap pretty much every time and been pretty happy with how the ribs go.

          I leave mine uncovered and unmolested, usually for 4 hours or so, then wrap when I pull them off for 5-15 minutes before cutting. If I go much beyond 4 hours, they're usually falling apart so badly I can't really even cut them. I've never understood the 3-2-1 method... mine would be total mush if I did that, I think.

            I do st Louis cut only and cook at 225, a few times but not many after 6 hours not quite done

          I do mostly spares, sometimes St.Louie, sometimes not. Never wap cuz of preference, also after thinking about it, it’s one more thing to do, so I don’t. I like to think I’m more efficient & a conservationist of effort, ya know the L word.
