Cured boston butt is frequently called buckboard bacon. If you do a search here, or on the interweb, you'll find additional information. I've made it several times smoking to IT 165º. Not saying that's right, just what worked for me.

How was this?
I have been thinking about doing a package of Costco pork butts using the Katz Recipe. Then smoking one of them all the way to probe tender and see how I like it. When I use the other butt in that package, I will go until I like the level of bark, then SV for the final step, just like I usually do when I make pastrami. (Instead of steaming)

About 3 hours, changed water 3 times, maybe 4. I am hoping it was enough. Last time, 8 hours was too much, it was way bland. But that was home cured... I got some other stuff for dinner, just in case. lol Always need a backup plan.
