    I love this text program. You see a misspelled word you edit and all is good. I wish you could do that with phone text and emails!

                    The belly came with ribs. I removed the ribs and the scored the belly diagonally. The seasoning is kosher salt, garlic, rosemary, sage, thyme, roasted black pepper and fennel and red pepper. I forgot the lemon zest dang it but I will probably squeeze lemon on it during cooking process. I have never made porchetta before. My next challenge is the smoker. I have a 22.5 kettle and pbc. I would really like to use the PBC and hang it but might be too much risk. I could put it on the grill. I'm not sure yet. The roll is 24" long!
                    Anyway it is a fun problem to have. I will send you cooking updates.
