My butcher gave me about 6 lbm of pork belly he'd had in the freezer for a long time. It wasn't wrapped properly and the fat (maybe the lean) was very freezer burnt. I thought what the heck and cured in for a week and it sucked in almost all the liquid. (Meathead's simple bacon cure). Smoked it yesterday to IT=150F. Sliced it up this evening and it looks and smells fine but some of the fat has a slight yellow tint. Anybody every run across that?

It won't be anything to hurt you or your family, but could be an off-taste from the freezer burn. Most likely, it's a smoke coloration that should have no impact.
The freezer burnt part has a bit of an off taste but not bad enough to chuck. I won't be giving this to friends or fam but it'll get consumed. Got a couple of $$s invested so it's all good.
