    Smoking a ham

    What is the time/per pound to smoke a ham to 140°? Thanks.

    Never tried it...would that be a cooked ham or is it fresh cured and needs cooking -- I think that will make a difference. The fully cooked ones are about 10-15 minutes per pound at about 325F in the oven -- should be similar on a smoker. May want to kick the temp up at the end to glaze.

      A 8 lb. ham takes about 3 hrs.

          Check out Meathead's article, The Ultimate Smoked Ham.

          "Cooking time. On a typical 8 pound ham, approximately 15 to 20 minutes per pound total at 225°F if you use the foil wrap, but you need a thermometer to tell, not a clock. If the ham is thicker or thinner (and that is usually related to weight), that time can vary."
