Thanks for the comments. Naturally we nibbled on some last night and it tasted pretty good...Hopefully it will reheat just as good for the party today...

I got lucky by not hitting much of a stall...I did get nervous at one point....about 7 hours in I flipped them to get some better bark on the bottom...after that the temp on one started dropping and dropped over 15 degrees and stalled...the other kept on increasing slowly...when the one that dropped temp finally started to rise there was about 25 degree difference...when one got to 203 degrees I checked them both with an instant read and both were almost at temp...

The one with the issue was an older probe and the one that was correct was a new probe...

Sometimes it doesn't matter how you get there as low ng as you get where you want to be...

At first I was frightened. Seeing the kettle in the back of the truck. Thought oh boy we’re In trouble now.
