    Whole Hog for a Cause

    Hi everyone -

    My BBQ buddy and I cooked a whole hog in Brooklyn last weekend for charity. We had a blast and raised some good money for a good cause. We kept things pretty simple - just salt on the skin; no seasoning in the cavity - Skylight Inn is our north star.

    For service, we chopped and dressed the pork with vinegar, salt, pepper, and Texas Pete. Skin was nice n' crispy too.

          Well done, especially for charity! Whole hog is so intimidating, yet really not that challenging a cook. It's very forgiving! I've done a bunch over the years and the crowd loved them all regardless of how much I tried to screw it up. Next time leave the head on, stuff an apple in the mouth, red or green grapes in the eye sockets and auction off who gets to (or has to) kiss the pig for photos. Another way to raise a few bucks for the cause. Congrats on the cook!
