      The pig was 80 lbs dressed. 6 hour cook is pretty short, but we didn't have any problems with wind or weather. It turned out deellishus! Please let me know if any questions or suggestions!

          Dang, that looks awesome! I'm curious, why a temp of 175 rather than 225. I've never cooked a whole pig but always have wanted to.

              hoovarmin - I was taught by a friend from NC who had many years experience. He said 175 should be the target cooking temp for the first 4 hours. He also said if you can touch your hand to the outside of the cooker for a just split second without feeling it burn (I'm not suggesting ANYBODY do this!), the cook temperature was about right.

              He also said that one mistake people make is being in a hurry and exposing the meat to high temperatures that can sear the meat and prevent heat from penetrating. I don't think that's as big of a problem if using indirect heat. I've had 250+ temps at times during the first 4 hours, and had no problems.

              The pig turned out great. I got some feedback from folks who said it was the best they ever had.

                  The appearance of the pig didn't change much from the photo taken when it was flipped (on page 1). It might have gotten a bit darker. You can see in the photo we did some bastin' and tastin'!
