    Dino ribs

This is an older smoked beef ribs I did. An oldie but goodie. I call them Dino ribs because they are custom cut for me. 12 inches long. 5 ribs weigh it at nearly 14 pounds. My proffered wood is cherry for these and the rub is whatever I throw together.

This is more of a thing for the kids.

I'm not a fan of beef ribs at all. Way to fatty for me. But rev the kids up for them with a flintstones marathon before dinner. Lol. Hence the "Dino ribs".

That is an incredible price!! I've never seen them anywhere for 2.09/lb.

Just a thought, cutting into individual ribs before cooking would allow more of that fat to render out, and give more bark. I love beef ribs myself, but find that whole slabs aren't as enjoyable as individual ribs, or true "shorties". Dino ribs are great for an impressive presentation though.

From where do you order them, and how do you describe to the butcher what you are after? When I first started playing with BSR, I tried to find them like you have, but the longest I could find was the cryovac slabs. I forget the cut #, at the moment.

I live in Wayne county Ohio, just above Amish country. I go to an Amish butcher and told him what I wanted. He cut me 4 large slabs.

This was a throw throw back Thursday order from two years ago.

Great lookin' ribs. I think I do need to see just one more photo of the rubbed ribs though.
