    Heritage pork ribs

    I purchased 2 rack of Duroc Heritage back ribs this AM. When I went to skin and trim, there didn't appear to be any membrane on the ribs. Do they skin and trim before packaging? First try at heritage ribs.

    Some do, some don't.

    Cant say I'm familiar with the brand, but if you don't see a membrane then they likely peeled it for you.

    Many times my duroc and kurobuta will have the membrane already trimmed. Cadillac service!

      Nice! Were those from a butcher? I use the French brand Le Farmer Jon. Pinto budget pics, yes please let's see those bad boys!

        That's the only pork I use. The membrane is hardly ever there, almost like it's a different animal. I have some st Louies for sat can't wait.

            I did the ribs on a Kamado. A tad dry, but otherwise OK. I think I should've used the PBC.
