    Porkography

    My Oklahoma Joe and I had round 2 today. Round 1 was 2 racks of STL style ribs, didn't turn out too bad but did figure out my thermometer on the smoker is WAY (60 degrees) off. So last night I followed Meathead's rub recipe and threw a small butt on the smoker this morning. 15 hours later I took it off. Can't wait to dig into it!!

                          fowlsuds, It Looks to Me Like You've Got the Hang of the OK Joe Highlands! I have one as Well and Like the Way it Smokes! I only wish they would have Used a Proper Welding Jig or a Trained Welder when Fabricating It, It leaked Like a Sieve when I first Got It! I have made Several Modifications to the Ok Joe Highland, First I added High Temp Caulk & Nomax Gasketing to the Doors, 2nd I added Firebricks to both the FireBox and the Cooking Chamber, 3rd I added a Tuning Plate (Baffleplate) from IslandBBQ's www.smokermods.com, 4th I added a Pit Bull (25 CFM) Fan from www.TheBBQGURU.Com that is Operated by My DigiQ DX-2 TempControl also by TheBBQGURU.Com!
