Nothing special. Was out of town all weekend and I took the day off to decompress from traveling. Seems like traveling is so much harder than it used to be for me. Anyways grabbed a butt at the grocery and started it at 10pm. Was ready at 1:45pmafter a 2h rest.
Only brined for 2h. No binder, just let MMD sit for 15 min in fridge. Hickory. Slow N Sear. Bark was great, tender and juicy throughout. Used a West Carolina Dip sauce from Meatheads book. I'm going to start putting more spicy things in the rub and sauces I've made to more fit my tasting preferences. But I wonder how much of it will be lost during the smoking process since I prefer to not wrap. Hmm. Now I'm rambling. See you guys next time!
