I'm going to cook this using the indirect method using cherry wood chunks and charcoal this is from a hog that I raised myself it's a Boston butt got about a one inch Fat Cap on it with skin it weighs anywhere between eight and ten pounds I've never used cherry wood for smoking ever most of the time I use apple wood chunks but a friend gave me some cherry wood chunks and said try this let me know how it works out so I got my fingers crossed and hoping I don't ruin some meat that I have a lot of money in raising myself and I'm going to be dusting it with the recipe that Meathead has with the Memphis dust

Homegrown pork cooking Boston butt

I'm going to be cooking this particular Boston butt on a homemade rig that's probably 20 to 25 years old it looks like crap but it's very efficient at what I'm doing I will send a picture so y'all can get a good laugh at it even my wife laughs at it but it sure does make a great Boston butt with indirect cooking
