    Refrigerator Saftey

    Wanted to get everyone's take on this- we are at our cabin and I purchased twp shoulders and a brisket to cook this weekend. The meat was purchased Monday afternoon and stored in the refrigerator. I was going to trim up the brisket this morning and noticed the refrigerator didn't feel as cool as what I'm used to. I stuck my thermapen in there and it showed around 50 degrees. Everything feels
    cool to the touch and the beer has been cool all week. My question- do you think this is safe to eat? I couldn't really find any good information on it.

    48hrs? Hmmm, that's iffy. I'm 50/50 on that one. If it were me, I'd probably sniff them and if they smelled good I'd do it, since with brisket and butts you're taking them up to near boiling. I can't from a safety standpoint say it's fine because that is a long time to be in the danger zone....I definitely wouldn't risk it with a steak or chicken though, something that wouldn't be taken up that high for that long.

      Yeah, I'm going to freeze the shoulders and still cook the brisket.
