Put a 7.49 lb. butt on at 1730. OAT 50°F, humidity 44%, winds light, variable.
Gave it a rinse, slapped Sea Salt, Fresh cracked Black Pepper, and Three Little Pigs rub on it, liberally.
I arranged ~50 Weber Hickory briquets unlit, then fired off ~35 in weber chimley. Dumped in/arranged when lit was ready. Kinda minion/snake. Added 12" x ~2.5" hickory split, for fun/flavor.
Unceremoniously plopped my butt on th' cooker, in a foil pan, when fire looked right.
Early lid temps were ~470°, I tweaked th' vents some to mediate.
15 min later, down to 370° This cooker runs good at 300°-375°, its ' "sweet spot"
Checked / photo op @ 1830, temps 370°. Turned laterally 180°, for even doneness.
