    Anyone have a guess how long a full slab of pork ribs should take with the temp running 245-250 on the grill?

    Could be a 5+ hour rack.

      I would trim them to St. Louis and cook the trimmings with the St. Louis figuring 5-6 hours.

        My vote is 6ish up to 7. Full spares or St Louis cut shouldn't make a bit of difference, the thickness is the same.

          You say "grill". Are you set up for 2-zone for smoking or actually grilling?
