I have bought the PRE-CUT Saint Louis style spare ribs from Costco and WinCo and both had the rib-tips still attached ??? Am I missing something...or is the Saint Louis cut have the rib-tips CUT off of the spare rib ???? It seems that both stores are just cutting the whole spare rib in half to sell more ribs ?

Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.

Most I get have the rib tips. Especially a local place that cuts their own and folds them over into a tray pack. I swear the hogs must be over 500 pounds they get them off of.

It sucks when half of the rib is RIB TIPS..... I should have known to bend them first to see if they were a cut with the tips still on as they were packed solo. My bad , I will just buy the whole spare rib from now on and trim it myself as the stores seem to cut them wrong.
