Last night I cooked the best pork tenderloin I've ever made! I planned to buy a whole pork tenderloin and cook in my PBC. But when I went the the meat market around the corner they only had the little dudes. So the plan changed. I had already invited over my in-laws, so I I bought three of the little guys & decided to cook reverse sear them on my Kettle.
I generally use Aaron Franklin's evolving rub, so I rubbed them with olive oil and the pork ribs level of rub. I set up the Kettle for two zone, and cooked them to about 120 degrees. I saute'd some butter, garlic & thyme that Flavorsavor suggested and brushed the pork as I moved and flipped them until they reached about 135 degrees.
I made Jamie Oliver's Perfect Roast Potatoes to go with them.
It was all delicious. Even my very picky FIL loved it all. I need to get used to taking pictures of my food so I can share. I'm sure I'll be making them again soon.
