I did a pork butt last weekend (which was fantastic as always) and decided to try something I've seen Meathead mention before...pulled pork egg rolls. They were fantastic! I brought a few into the office, put them in the toaster oven to reheat them and they were a huge hit. A few days later my Cowboy Candy (another Meathead winner) had finished its week long pickle session so I added those to another batch, they were an awesome addition. At the request of my fiance, the next time will be with spring roll wrappers since they are a bit lighter and she'll feel a little "healthier" eating them.
Here is how I went about it:
Pulled pork leftovers
A squirt of BBQ sauce
Some asian slaw (napa cabbage, shredded carrots, celery) tossed in Mirin rice cooking wine
* On my second attempt I added a few slices of Cowboy Candy (pickled candied jalapenos)
Rolled it up and fried it in vegetable oil until golden brown.
