how do you keep pork belly nuggets for a few days?
These pork belly nuggets have been smoked for 2 hrs and then about 1.5 hrs of braising loosely following Malcom Reed's recipe. Going to hold off on that last glace step since I want to eat these over a few days, not now.
Whats a good way to keep something so crispy and saucy for 3 days?
Its all new to me and my first try but sure enough someone ate a good helping of them right away. would not be surprised if they are all gone by dinner tomorrow. What a great bbq cook and it wont be long before I do another batch.

We made them last weekend. They kept in a sealed plastic container. Well, overnight because a certain 16 year old boy who eats massive quantities of food ate them. We reheated in the oven with sauce in a foil packet.
Like you I use Malcom Reeds recipe, pretty much letter for letter.
Coupla minuscule changes but not much.
Do cut down on the butter as stroke prevention!
same here. used 1/2 the butter and still had a good pool of it in the tray. and I did not glaze. I added some Cosmos BBQ sauce to the sugar/honey/butter and it was great. Also some more rub seasoning. I can totally see how the saucing part is going to be fun. So many different options and directions you could go in.
