I saw something recently about Coffee Rub Ribs. Sounded interesting, but can't find a recipe. Thought about using Memphis Dust and adding some coffee crystals. Any suggestions?

Here is one I got from the New York Times cooking section a few years ago. At the least it may give a guide to portions.- ¼ cup finely ground dark-roast coffee
- ¼ cup ancho chile powder
- ¼ cup dark brown sugar, tightly packed
- 2 tablespoons smoked paprika
- 2 tablespoons kosher salt
- 1 tablespoon ground cumin

Seen this for beef... Could start there and change it up for pork.

I use ground coffee in rubs, or leftover percolated coffee in my 'Cue fairly often.
Nuthin fancy, usually, jus cafe' du jour...Kroger Premium Blend, or whatever's left in my Corningware percolator, at th time...
I'd havedta guess Instant Coffee Crystals would yield bout th same Gratification Level in a rub, as it does in a Cuppa Joe... Gack / Phooey. : (Schnasty), 'd be my guess)
(Times'd havedta be purty dang danged hard, fer that to happen, round these here parts...)
I actually, frequently dehydrate my used perc grounds, an mix some in with chili, salsa, an rubs...way more subtle, but, in proper proportions, I can taste an appreciate th additional layer of flavour...
