    So simple, Prep/trim/season, cook to 195* internal, rest slice, and eat.

      I've started relying on the toothpick probe test rather than inside temps.
      Find it is a better test than relying on inside temp.
      Half sauced and half un-sauced usually works here.

        Nice! While there's nothing wrong with wrapping, spritzing and saucing, running them nekkid produces excellent results.

        I love naked ribs and the associated killer bark, but I usually omit sauce. Just my preference.

          I offer some sauce, there, on th side. Oftentimes, some my own ones...
