    Kan Kan Pork Chop for 2

    I found this interesting item on the menu at a restaurant near our camp in the Adirondack montains. The menu description states "This incredible cut of pork starts with 2.5 pounds of Heritage Cheshire Pork. It consists of a bone in loin chop, as well as rib and belly meat. Marinated then cold smoked, and served with crispy skin. "

    It was truly an impressive presentation and when I spoke to the chef/owner's wife I asked if they butcher the meat in-house and she said, no they order them that way from Cheshire Pork. You can order yours here https://buypork.com/pork/all-natural...hops-6-chops/.

    It was an interesting experience. I found it a touch on the dry side, the cubed ends were rendered nicely, but unlike pork belly I have had they were all fat, no meat. The dipping sauce was sour (orange & lime) mojo and was very tasty.
