    Pork Collar or CT cut pork butt

    Getting ready for the KCBS pork rule change starting November 1, I've got 4 pork collar butts (3 in the freezer). I'm going to test cook one, just like I'd do it for a contest. So I'll be cranking up the Backyard Jambo!

    I had the barbed wire decoration on the skirt removed, along with the rest of "Texana" on the sign (not visible on this side)!

        I want your competition drum recipe or tips. Usually I do 1/2 birds, but drums would be an interesting change.
