When I made Henrik inspired Johnny Trigg-style ribs on Saturday, I started out with a rack of full spares which I trimmed down to SLC's. Although I don't usually do this next bit since I am usually hanging 4 racks in my ThermoTemp XL and don't have any grates installed, this time I cut up the trimmings, rubbed them and smoked them on a rack at the bottom of the cabinet. The only parts I didn't do this with were the flap of skirt meat from the bone side of the rack and a small piece of what looked almost like loin meat. Those I seasoned just with a little SPG and grilled them hot and fast for a few minutes on the gasser near the end of the cook. I expected the skirt flap to be tough or chewy. To my surprise, it was fantastic! Moist tender and flavorful. The loin-looking piece was good too. I guess I didn't overcook it.
