Cooking some pigs on the rotisserie

I have some big parties coming up and just figured I would cook it all at once. I have somewhere around 400 lbs of pork in the smoker. Almost three pigs!! I saved the pork bellies out of the biggest one. Click image for larger version

It makes it way easier to get off the smoker just throw it in meat totes and push in the walk in cooler !! Now I have to bone it all out. Yuck!!

I am surprised no one asked how I pull it because I threw it in the cooler last night. Well simple answer is I don't... I chop it in my vcm aka a 45 quart food processor on steroids. It has a plastic blade on it for kneading bread but also works great for chopping pulled pork. It has a 5hp motor and spins at 1150 rpm.. Click image for larger version

Somehow I think one bottle of Black Swan sauce wouldn’t quite be enough here.
