I got a 9lb Boston Butt for the smoker today. Did not inject anything, only coated lightly with olive oil and liberally with my favorite rub.
I'm cooking on a homemade drum smoker, it's been working very well for years now. I got the temp to settle at 225* then tossed on the pork shoulder.
After 4.5 hours I'm at 162*. Looks like it's doing what it's suppose to be doing! Hope it taste as good as it smells!!
