    SmokinDTown Using a Thermapen on ribs is difficult because the meat is so close to bones everywhere. The bend test is your best bet IMO

    Sunday confessions. yea, I know Meathead. Anyway. Had a little more time today so tried a second cook on my GF smoker. Here are the ribs rubbed. I didn't have any rosemary, sorry Meathead!

    I fired up the Stumps clone and got the cook chamber up to 240 degrees.

    I had a good bark at the end. I think the meat was a little dry, but if so, fifteen minutes makes a big difference!

    I thought they came out a lot better than the first batch. ( I over-salted!) Next time I think I will try the Thermopen in addition to the bend test!
