    Moving the bar a notch (maybe)

    Ordered a baking Steel today, and some Caputo 00 flour. Hoping to take my crust to the next level. Also ordered a few Batard bannetonns for bread today. i need to stop buying stuff. LOL

      I think when It gets here, I will make a batch with the Caputo 00, and instantly start a Caputo 00 Sourdough starter. and do a taste comparison. Pretty excited about this.

      Currently my thought is a cold proofing and hope I can go free form, if I can not get that to work, then I will order something like what you posted. But, my "cart" was heavy enough today".

      Once you get the BS, (That's Baking Steel Mr. Bones - not what you are thinkin' ), you can bake directly on that and use a pot large enough to cover the batards to retain the steam.

      RonB , That was my hopes, to use if for some bread as well, I have my eye on the 3 Kilo Boule I am telling my wife at least that this was not just purely for pizza.

      I start an attempt at a double ferment sourdough this morning for two loaves tomorrow. If you lived closer I'd keep you stocked up on bread, I will probably keep one loaf, and give one away to a friend. I'd be happy just baking two loaves everyday and give them away, but, my budget says different. Same goes for smoking, I'd be happy just to smoke shoulders and briskets for friends. I need to get myself a brisket flat for some pastrami, and soon!

    Richard Chrz I just started browsing through Ken Forkish's The Elements of Pizza yesterday and was thinking of ordering some Caputo 00 to try out some pizza on my baking steel. Where did you order yours from?

      jumbo7676 I ordered I believe a 9 lb bag on Amazon. I believe everything less then a 55lb bag is considered a repackaged bag. I am going to look for friends in the future to help split the 55lb bag, or clear a spot in my refrigerator for it. Enjoy the book, I have loved it so far!
