Someday, I will learn to make a good sour dough bread for dipping in this wonderful stuff! I found a packet of smoked eggplant in the freezer last night and had just purchased a jar of tahini and fresh garlic. In the food processor went the eggplant, probably 1/4 cup tahini, a good glug of extra virgin olive oil, grated one garlic clove and a good shake of hot smoked paprika. It was a bit thick so I added some water. Had some out on the plate when I realized there was no Greek yogurt in there. Swirled some in, dusted with some Harissa, toasted some store bought sour dough and tucked in. Wish I'd taken a pic!
